Chicken with Lime Sauce

This sauce is really delish!
The original recipe had any asked to cook the chicken 5 min. on each side in a pan. Obviously that is not long enough to cook chicken through. So I threw it in the oven for 20 minutes before adding to the sauce and voila!

Source: Cooking Light (tweaked by me)

Ingredients
2 thick, skinless, boneless chicken breasts
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 teaspoons olive oil
Cooking spray
3/4 cup fat-free, less-sodium chicken broth
1 tablespoon brown sugar
3 tablespoons lime juice, divided
2 teaspoons Dijon mustard
2 tablespoons water
1 teaspoon cornstarch
1 tablespoon butter

Directions
Place each chicken breast between 2 sheets of heavy-duty plastic wrap; pound to 1/4-inch thickness using a meat mallet or small heavy skillet. Sprinkle chicken with salt and pepper.
Pre-heat oven to 375.
Heat oil in a large nonstick skillet coated with cooking spray over medium-high heat. Add chicken; cook 5 minutes on each side or until browned. Remove from pan and place in a baking dish.

Finish cooking in oven for about 15-20 minutes (until no longer pink).
While chicken is in the oven,

Put chicken broth, sugar, 2 tablespoons juice, and mustard in (same) skillet; cook over medium heat, scraping pan to loosen browned bits.
Combine water and cornstarch in a small bowl. Add cornstarch mixture to pan; stir well with a whisk. Bring to a boil over medium-high heat; cook 1 minute or until sauce thickens slightly. Whisk in remaining 1 tablespoon lime juice and butter, stirring until butter melts. Return cooked chicken to pan; simmer 2 minutes.

Inside-Out Cheeseburgers

Source: Eating Well

Ingredients:
1/4 cup shredded Cheddar cheese
1/4 cup shredded Gruyere cheese (i omitted this and doubled the cheddar)
1 pound 90% or 93% -lean ground beef
1 tablespoon Worcestershire sauce
1 1/2 teaspoons paprika
1/4 teaspoon freshly ground pepper

Directions:
1. Preheat grill to medium-high or preheat the broiler.
2. Combine Cheddar and Gruyere in a small bowl.
3. Gently mix beef, Worcestershire, paprika and pepper in a large bowl, preferably with your hands, without overworking. Shape into 8 thin, 4-inch-wide patties. Mound 2 tablespoons of the cheese mixture on each of 4 patties, leaving a 1/2-inch border. Cover each with one of the remaining patties. Crimp and seal the edges closed.
4. To grill: Lightly oil the grill rack. Grill the stuffed patties over medium-high heat, about 4 minutes per side for medium-well. (Be sure not to press the burgers as they cook or they'll split open and the cheese will ooze out.) To broil: Cover a broiler pan with foil and coat with cooking spray. Broil the stuffed patties in the upper third of the oven, about 4 minutes per side for medium-well. In either case, let the burgers stand for 5 minutes before serving.
(I used a grill pan and the broiler. I grilled the burgers on each side for a few minutes until the outside was browned...then I put them in the broiler for 2 min on each side to cook them all the way thru.)
I topped mine with tomatoes, avocados, ketchup, and fresh ground pepper on wheat buns.

Chicken with Potatoes, Lemon, and Asparagus

I forgot to take a photo of this for my blog, but I have made it many times and it's a really hearty, filling dinner! Wanted to share...
I can update this entry with a photo the next time I make it!
Enjoy!

Source: Martha Stewart + my own twist

Ingredients:
4 - 6 potatoes, cut each potato into fours
3 tablespoons butter, cut into small pieces
1 package chicken breast (on the bone OR boneless, whatever you prefer)
1 bunch asparagus, trimmed and cut into 2-inch pieces
1 lemon, cut into 8 wedges
thyme
salt & pepper

Directions:
1) Preheat oven to 475 degrees. Place potatoes and half the butter in a roasting pan and season with salt & pepper. Roast, tossing once, until potatoes are golden, about 15-20 minutes.
2) Place chicken (skin side up, if using on the bone) in the pan. Season chicken with salt & pepper. Roast until chicken begins to brown, about 30 minutes.
3) Scatter asparagus, lemon (give the lemon pieces a little squeeze over everything), remaining butter, and thyme around chicken. Roast until asparagus is tender and chicken is opaque throughout, about 15 minutes. Serve chicken, veggies, and lemon drizzled with pan juices.
